At present, various kinds of nutrient-fortified eggs such as selenium-rich eggs, folic acid eggs, omega-3 eggs, lutein eggs and astaxanthin eggs appear in the market. Feeding natural functional additives to laying hens not only makes the chickens grow healthier, but also produces eggs with large yolk, yellow color, thick egg white and no fishy taste. At the same time, eggs are also rich in natural functional nutrients that are beneficial to human health. For example, astaxanthin eggs are rich in natural egg astaxanthin, which has powerful antioxidant function. Selenium-rich eggs can improve human immunity, and omega-3 eggs have the effect of lowering fat and nourishing the nervous system. What's more, eggs are excellent carriers of natural nutrients, with better palatability and higher absorption rates.

The author found in the research of breeding farms and sales markets in Beijing area that some small and medium-sized breeding farms have quietly sprung up customized production of nutrient-fortified eggs, which has greatly improved the efficiency of breeding. On spring sowing websites, selenium-rich oil eggs made with bioactive selenium sell for 4.5 yuan each, while natural astaxanthin eggs sell for 5 yuan each, often in short supply.

Nutrient-fortified eggs not only meet the needs of consumers, but also have high added value. Through customized production of different kinds of nutrient-fortified eggs for specific groups and markets, personalized consumption needs of relevant groups can be met. At present, the nutrient-fortified egg industry is in the ascendence, and has become a powerful starting point for developing characteristic industries to help rural revitalization.

Compared with some developed countries, the development of nutrient-fortified eggs has just started in our country. Although many types and various functional characteristics of series products have been formed, there are still a series of problems such as not perfect standards, unstable quality and non-standard market. It is necessary to standardize and guide from the source to ensure the healthy development of egg industry.

Strengthen technical support. It gathers forces from agriculture, food, medicine and other disciplines to conduct research on the industrial development, technological innovation and product safety of functional nutritious eggs, establishes a standard production technology system, clarifies the influence of different functional nutritious eggs on human physiology, and provides theoretical and technical support for the production and consumption of functional nutritious eggs.

Improve industry standards. It has established and improved industry standards for various kinds of nutrient-fortified eggs, and supported relevant technical specifications for production, storage, transportation and consumption, encouraged third-party organizations to carry out product certification, established unified identification, classification and classification systems, and further standardized production, transportation, sales and other links of functional nutrient-fortified eggs to ensure stable product quality.

The nutrient-fortified egg industry conforms to the national health strategy, meets the consumer's demand for high-quality agricultural products, and has great market development potential. Due to its high value-added and low input attributes, it can be used as an important starting point for the transformation and upgrading of rural characteristic industries and help the high-quality development of livestock industry.
